An Apple A Day Catering has been a Glencoe business for 25 years. When they moved to their 3rd location on Park Ave., they introduced Meg's Cafe. Meg's is named after, the owner Barb's daughter. An Apple A Day is a full service catering business. They provide food, linens, a full staff, floral arrangements and entertainment. They can host a small dinner party to a large wedding. Amy, the manager said "we love to cater for large events - the more the merrier". I asked if she was nervous about catering the Housewalk luncheon that can attract up to 600 guests. This is their first year helping with the event. She replied, "it will be so much fun".
The restaurant often features "today's special" for lunch and dinner. The daily specials are based on customers' requests and seasonal ingredients. The Chicken Pot Pie is a popular special along with the Sweet Potato Souffle, offer only in the Fall. They serve 4 different kinds of soups everyday, including their popular Tomato Bisque. They offer beer and wine. They also sell their famous "An Apple A Day" chicken salad, along with other appetizing choices at the deli.
Barb was kind enough to share the recipe to the famous "Megan Cookies". The cookie recipe was given to Barb when Meg was born, along with a fresh batch of Megan cookies.
Megan Cookies
*note these measurements are for a large batch, divide ingredients in half/quarter for a smaller batch*
4 c. brown sugar
4 c. sugar
3 lbs. margarine
12 beaten eggs
6 tsp. baking soda
6 tsp. baking powder
6 tsp. vanilla
4 c. walnuts
4 c. coconut
4 c. butterscotch
4 c. raisins
4 c. oats
12 c. flour
Mix all wet ingredients together. Mix all dry ingredients together. Mix both wet and dry altogether with a stand mixer. Form small balls and place on a cookie sheet 2 inchs apart. Bake until lightly golden brown in 350 degree oven.
